Ingredients
- 2 cups Honey Beans (Oloyin)
- 1 large Onion, chopped
- 2 tbsp Ground Crayfish
- 3 Scotch Bonnet Peppers (Atarodo)
- 1/4 cup Vegetable Oil or Palm Oil
- 2 Bouillon cubes
- Salt to taste
Instructions
- Step 1: Soak the beans in water for 5 minutes, then peel the skins off by rubbing them between your palms or using a blender pulse method.
- Step 2: Blend the peeled beans with the peppers, half of the onions, and a little water until a smooth paste is formed.
- Step 3: Pour the batter into a bowl. Add the oil, crayfish, bouillon cubes, salt, and the remaining chopped onions. Mix thoroughly.
- Step 4: Scoop the mixture into small containers, foil bags, or traditional leaves (Ewe Eran).
- Step 5: Place a steamer or a pot with a little water and a base (like stalks) on the heat. Arrange the wraps inside and steam for 30 minutes until set.
- Step 6: Serve hot with pap (ogi) or custard for a perfect low budget meal.
