Easy Fried Rice Recipe with Everyday Ingredients

Ingredients
- 4 cups cooked Jasmine rice (day-old, chilled is mandatory)
- 2 tbsp vegetable oil (high smoke point like peanut or avocado)
- 3 large eggs, lightly beaten
- 1 cup frozen peas and carrots blend
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 tbsp light soy sauce
- 1 tsp dark soy sauce (for color)
- 1 tsp toasted sesame oil
- 2 stalks green onions, thinly sliced
- 1/4 tsp white pepper
Instructions
- Prepare the rice by breaking up any large clumps with clean, wet hands so the grains are individual and free-moving.
- Heat your wok or large skillet over high heat until a drop of water sizzles away instantly; add the vegetable oil and swirl to coat.
- Pour in the beaten eggs and scramble quickly for about 30 seconds until mostly set but still soft; remove eggs from the pan and set aside.
- Add another teaspoon of oil if needed, then toss in the garlic and ginger for 15 seconds until fragrant but not brown.
- Add the frozen peas and carrots, tossing for 1-2 minutes until they lose their frost and look vibrant.
- Turn the heat to maximum and add the chilled rice. Spread it out and let it sit for 30 seconds to sear before tossing.
- Drizzle the soy sauces around the edges of the pan so they sizzle before hitting the rice; toss everything vigorously for 3 minutes until the rice is evenly colored and steaming.
- Fold the cooked eggs and green onions back into the pan, season with white pepper, and remove from heat.
- Drizzle with toasted sesame oil at the very end and give one final toss before serving immediately.
