Cheap Rice Recipes That Fill You Up
Rice based meals are perfect for cooking filling food on a tight budget.
Ingredients
- 2 cups long-grain white rice (thoroughly rinsed)
- 3.5 cups homemade vegetable scrap stock or water
- 2 tbsp vegetable oil or rendered fat
- 1 medium onion, finely diced
- 3 cloves garlic, smashed and minced
- 1 tsp turmeric powder
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1 tbsp lemon juice or white vinegar
Instructions
- Rinse the rice in cold water, swirling with your hand until the water transitions from milky to mostly clear; drain thoroughly in a mesh sieve.
- Heat the oil in a heavy-bottomed pot over medium heat. Sauté the onions until the edges turn golden-brown and translucent, about 5-6 minutes.
- Add the drained rice to the pot. Stir constantly for 3-4 minutes until the grains sound like 'sand' hitting the metal and turn an opaque white color.
- Stir in the garlic, turmeric, salt, and pepper, cooking for only 30 seconds until the garlic fragrance hits you strongly.
- Pour in the liquid and acid. Bring to a rapid boil, then immediately turn the heat to its lowest setting.
- Cover with a cloth-wrapped lid to create a steam seal. Simmer undisturbed for 17 minutes.
- Turn off the heat but DO NOT open the lid. Let the pot sit for 10 minutes to allow the moisture to redistribute.
- Fluff gently with a fork, lifting from the bottom to avoid mashing the grains, and serve immediately.
