Cheap Black Bean Tacos With Homemade Salsa

Ingredients
- 2 cans (15 oz) black beans, drained and rinsed
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 12 small corn tortillas
- 4 large Roma tomatoes, diced
- 1/2 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 jalapeño, seeded and minced
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Optional: Shredded cheese or sour cream
Instructions
- Step 1: In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent.
- Step 2: Add the minced garlic, chili powder, cumin, and smoked paprika to the skillet. Stir for 1 minute until fragrant.
- Step 3: Pour in the drained black beans and a splash of water (about 1/4 cup). Use a fork or potato masher to lightly smash about one-third of the beans—this creates a creamy texture. Simmer for 5-7 minutes, then season with salt and pepper.
- Step 4: While the beans simmer, prepare the salsa. In a medium bowl, combine the diced tomatoes, cilantro, jalapeño, and lime juice. Stir well and add salt to taste. Set aside.
- Step 5: In a separate small skillet, heat the remaining oil over medium-high heat. Lightly toast each corn tortilla for 30 seconds per side until warm and slightly charred.
- Step 6: Assemble the tacos by spooning the black bean mixture into the warm tortillas. Top generously with the homemade salsa and any optional toppings like cheese or lime wedges.
