Budget West African Peanut Stew With Chicken
A deeply flavorful West African groundnut stew with tender chicken — made with simple affordable ingredients and served over rice.
Ingredients
- 1 lb boneless skinless chicken thighs, chopped
- 1/2 cup creamy peanut butter
- 2 tbsp tomato paste
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 large sweet potato, peeled and cubed
- 3 cups chicken broth
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Fresh cilantro and crushed peanuts for garnish
Instructions
- Step 1: Heat oil in a large pot over medium heat. Season chicken with salt and pepper, then brown in the pot for 5-7 minutes. Remove chicken and set aside.
- Step 2: In the same pot, add the onion and cook until softened. Stir in the garlic, ginger, and tomato paste, cooking for 2 minutes until fragrant.
- Step 3: Add the cubed sweet potatoes, cumin, and cayenne pepper. Stir to coat the vegetables in the tomato mixture.
- Step 4: Whisk the peanut butter into the chicken broth until mostly smooth, then pour the mixture into the pot.
- Step 5: Return the chicken to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the sweet potatoes are tender and the sauce has thickened.
- Step 6: Taste and adjust seasoning. Serve hot over white rice, garnished with cilantro and crushed peanuts.
