Instructions
- Step 1: Heat the oil or butter in a wide skillet over medium-high heat until it shimmers; add the garlic and thyme, letting them sizzle for 30 seconds until fragrant but not brown.
- Step 2: Add the rinsed and drained rice to the pan, stirring constantly for 2 minutes. You are looking for the tips of the rice grains to turn opaque and smell slightly nutty.
- Step 3: Pour in the boiling water and salt. The mixture should come to a violent boil immediately. Stir once to ensure no grains are stuck to the bottom.
- Step 4: Cover with a tight-fitting lid and reduce heat to the lowest setting. Set a timer for 12 minutes exactly; do not lift the lid.
- Step 5: Remove from heat and let it sit, still covered, for 5 minutes. This allows the moisture to redistribute. Fluff with a fork, never a spoon, to avoid mashing the grains.
