- 2 cups Fresh Bok Choy, leaves separated from the crunchy stems
- 1 tsp Toasted Sesame Oil (added off-heat only)
- 1 tbsp Neutral oil with a high smoke point like Grapeseed
Instructions
- Boil the noodles in salted water, pulling them out 1 minute before the package instructions suggest; they should have a firm 'bite' in the center.
- Heat your wok until a single drop of water dances and evaporates instantly, then swirl in the neutral oil.
- Toss in the ginger and garlic, stirring constantly for 30 seconds until the kitchen smells intensely fragrant but the garlic remains pale gold.
- Add the bok choy stems first for a 1-minute sear, then the leaves and the noodles, tossing vigorously to prevent sticking.
- Pour the soy sauce and vinegar mixture around the edges of the wok so it caramelizes slightly before hitting the noodles.
- Turn off the heat, drizzle with sesame oil, and toss one last time until every strand is glossy and mahogany-colored.
